In fact, scientists still aren’t sure exactly why we even sleep! To this day, they only have educated guesses and theories.
…But to give you a good working definition of sleep, here’s how Harvard defines it:
A state of low physical activity and response to stimuli, along with increased activity in some brain functions and eye movement.
So… what does that mean in practical terms?
It means your body is the most ‘switched off’ it can be, while specific parts of your mind (particularly those associated with memory) are more ‘switched on’ (even more so than while you’re awake). source

Scientists have found that, each night, our bodies go through sleep cycles in a relatively consistent pattern:

It shows your body’s progression through the five stages of sleep, on an average night. You can see that, with 8 hours of sleep, your body typically goes through five full sleep cycles, the amount of time spent in REM getting progressively longer.
